About Castle Valley Mill

Why We Choose Castle Valley Mill Grains for Our Breads

At the heart of our baking lies a deep respect for tradition, craftsmanship, and quality ingredients. This is why we have chosen to use Castle Valley Mill, a historic gem nestled on the banks of Neshaminy Creek in Bucks County, Pennsylvania. Since 1730, Castle Valley Mill has been grinding grains with care and dedication, preserving the rich heritage of American milling.

Built on land granted to the Meredith family by William Penn, the mill has weathered centuries of change, from the dawn of the Industrial Revolution to the present day. Its story is one of resilience and passion, brought to life by Henry Fischer, who restored the property after acquiring it in 1947. A miller from Erlbach, Germany, Henry Fischer devoted himself to the meticulous restoration of the mill and its machinery, safeguarding a piece of history that might otherwise have been lost.

Today, Castle Valley Mill continues to thrive under the stewardship of Henry's grandson, Mark Fischer. The mill operates with antique stone mills and processing machines that have been lovingly restored and brought back to life. Each grain ground at Castle Valley Mill carries with it the legacy of centuries of milling expertise and a commitment to quality that resonates deeply with our own values.

By using Castle Valley Mill grains in our breads, we not only ensure that our products are of the highest quality, but we also support the preservation of this historic landmark. Every loaf of bread we bake with their grains is a tribute to the enduring tradition of American milling and a celebration of the flavors and textures that only such dedication can produce.

When you enjoy our breads made with Castle Valley Mill grains, you’re not just tasting extraordinary ingredients—you’re partaking in a piece of history that continues to inspire and enrich our craft.
